INGREDIENTS
1. Squirrel fish - 1 pc
2. Lime - 1 pc
3. Garlic - 2 cloves
4. Ginger - 1 small piece
5. Honey - 1 tsp
6. Butter - 2 tbsp
7. Olive oil - 40 ml
8. Chili - optional
9. Parsley - to taste
10. Salt & pepper - to taste
Step By Step Cooking Process
STEP 1
Cut the fish along the spine from the back, without cutting all the way through. Rinse, pat dry, and make shallow cuts across the fillet. Season with salt and pepper, then drizzle with fresh lime juice.
STEP 2
Heat a little olive oil in a frying pan. Place the fish skin side down and, pressing gently, fry over medium heat until golden brown. Flip and cook through. Transfer to paper towels to drain.
STEP 3
In a separate pan, melt the butter. Add minced garlic, a teaspoon of grated ginger, honey, a little chili, and a few drops of lime juice. Heat for 30 seconds, then quickly brush the mixture over the cooked fish.
STEP 4
Place the fish on a plate. Add a garnish of your choice, fresh herbs, and a wedge of lime.
