1. Pork - 350 g
2. Potatoes - 2
3. Carrot - 1
4. Onion - 1
5. Bell pepper - 1/2
6. Tomato - 1
7. Salt & pepper - to taste
8. Vegetable oil - for frying
Step By Step Cooking Process
STEP 1
Peel and cut the potatoes into large chunks. Leave them in cold water to remove excess starch.
STEP 2
Dice the onion, slice or grate the carrot, and cut the bell pepper into half-rings.
STEP 3
Score the tomatoes with a cross, pour boiling water over them for 30–40 seconds, then cool in cold water and peel the skin.
STEP 4
Cut the pork into portions and sear in a hot pan with oil until golden brown on both sides.
STEP 5
Season with salt and pepper, then add carrot and onion. Cook for 5–7 minutes, stirring occasionally.
STEP 6
Add the bell pepper without stirring. Add the potatoes, cover, and simmer on low heat for 15–20 minutes.
STEP 7
Gently stir, then add chopped peeled tomatoes. Continue cooking covered for another 20 minutes on low heat. Add a bit of water if needed.
STEP 8
Serve with fresh herbs and bread.
